Jerky Jam! With fried bacon, caramelized onions, maple syrup, brown sugar, and balsamic! AMAZING!

I have a confession to make. I have never tried jerky until a few months ago. It’s true. I never had it. I had some pre-conceived ideas about what jerky was and how it tasted. And I was totally wrong.

My first experience with jerky was trying Coleman Steak Snacks. If you are looking for the best steak snacks out there, you have to try Coleman (my favorite is the sweet teriyaki). Once I tried these steak snacks, I threw out my pre-conceived notions about jerky and started to think about how I could actually incorporate it more.

My first thought was to treat the steak snacks like bacon. Coleman’s Steak Snacks have almost the same consistency as cooked bacon and I knew I could turn it into a tasty treat. You know the saying, go big or go home!

One of my favorite things to do with bacon (aside from just eating it right out of the oven) is bacon jam. And I knew Coleman Steak Snacks would be a great substitute. And so jerky jam was born!

While the recipe is a little involved, it’s totally worth it! The smells and flavors that will be coming out of your kitchen will be amazing.  Once everything is cooked, you simply throw it into your food processor and you have a flavorful jerky jam ready.

Ingredients

Jerky Jam

  • 2 bags of Coleman Steak Snacks Original, diced
  • 2 cups onions, diced
  • 1 clove garlic, minced
  • 1/4 cup light brown sugar, packed
  • 1/4 cup maple syrup
  • 1/2 cup balsamic vinegar
  • 1/4 cup brewed coffee
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 Tbsp fresh sage, chopped
  • 1 baguette, sliced on a bias

Apple Slaw

  • 2 apples, julienned
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp maple syrup
  • 1/8 tsp Chinese five spice

Instructions

  1. To make the jerky jam, add diced Coleman Steak Snacks and diced onion in a medium-size skillet over medium heat. Cook until onions are translucent and slightly browned, about 10 minutes. Add the garlic and sauté for two more minutes. Add the brown sugar, maple syrup, balsamic vinegar, and coffee to the skillet. Bring the mixture to a simmer and reduce for about 10–15 minutes, until it becomes syrupy. Finally, stir in the Dijon mustard, salt, pepper, and sage. Remove the pan from the heat and bring to room temperature. Process the cooled mixture in a food processor until there are small chunks and it's a spreadable consistency.
  2. To make the apple slaw, toss all ingredients in a small bowl. Use immediately.
  3. Spread about one tablespoon of the jerky jam on each slice of baguette. Top the jerky jam with a generous pinch of the apple slaw and serve.
