Wow, has the weather really changed in the past few days! We had record snow fall on Thursday and by the weekend, everyone was breaking out the flip flops and shorts. You know what else we broke out? The grill. Even though the grill cover was frozen to the ground, that did not stop us! A little hot water and that was taken of. Nothing was standing in our way of burgers on the grill and enjoying the spring-like weather.

Oh yeah, I totally went there. I upped the ante on the burgers this time. I mean, you have to celebrate 40+ degree weather when it’s been a miserable winter. Not only did we add some bacon to our burgers, I threw an Alexia Crispy Onion Ring on top.

And it was amazing!

If you think I stopped at the burgers, you would be absolutely wrong. We normally have fries with our burgers but, this time, I decided to save the fries for dessert. Yes, you heard me right. Dessert.

Cinnamon Sugar Sweet Potato Fries

This recipe couldn’t be any easier. For the sweet potato fries, you’ll need:

Thaw out your sweet potato fries for about 10 minutes and place them in a large bowl. Mix the cinnamon and sugar together in a small bowl. Sprinkle over the fries and use your hands to toss them.

Place on a baking sheet (make sure they don’t overlap) and bake according to the direction on the package.

While the fries are cooking, prepare your vanilla icing glaze. You will need:

  • 1 cup confectioners’ sugar
  • 2-3 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract

Wisk all of the ingredients together. Start with 2 tablespoons of heavy cream and add more if icing is too thick.

Drizzle on top of fries…

…OR serve on the side to dip!

Cinnamon Sugar Sweet Potato Fries

Ingredients

Sweet Potato Fries

  • 1 package Alexia Sweet Potato Fries, or your own sweet potato fries
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar

Vanilla Icing Glaze

  • 1 cup confectioners' sugar
  • 2-3 Tablespoons heavy cream, or milk for a less creamy texture
  • 1/4 teaspoon vanilla extract

Instructions

  1. Thaw out sweet potato fries for 10 minutes and place into a large bowl. Add cinnamon and sugar to bowl and use your hand to toss sweet potato fries. Bake according to directions on the package.
  2. Serve with vanilla glaze dip. For the dip, simply whisk all of the ingredients together. I usually start with 2 Tablespoons of the cream and add 1 more if it seems too thick. Enjoy immediately.
