I don’t know who was more excited about the release of Big Hero 6 on DVD, me or the kids. It’s rare that you come across a kids’ movie that both the kids and parents enjoy. Big Hero 6 was definitely one of them! All of us fell in the love with the characters and couldn’t wait for it come out on DVD.

To celebrate the release, I ran (no, I’m serious, I did) to Target to grab it on Tuesday when it came out. Let me tell you, I wasn’t the only there nice and early to snag their copy.

Since we all love the movie so much, I couldn’t let the DVD release go buy without a little fan fare. Since it was a weeknight, I needed something for after dinner.  The boys always like having a dessert after dinner so that made the decision pretty easy for me. Baymax cupcakes it is!

I wanted to try my hand at making my own cake mix…from scratch. I have been phasing out box mixes in other areas (like brownies and pancakes) and cake mix was next on my list. I decided to start off with an easy and simple white cake mix.

Big Hero 6 Baymax Cupcakes

For this white cake mix you will need, 2 1/4 cups cake flour, 1 cup milk, 6 large eggs white, 1 teaspoon vanilla extract, 1 3/4 cups granulated sugar, 4 teaspoons baking powder, 1 teaspoon salt, and 1 1/2 sticks of unsalted butter.

Start by mixing the milk, egg whites, and vanilla together in a medium bowl until blended. Set aside.

Next, mix together your cake flour, sugar, baking powder, and salt in a large bowl. Cut the butter into cubes and add to the bowl.

Mix well with an electric mixer for about 2 minutes until the butter is combined. Add the milk mixture and beat for another 2 minutes on medium speed.

Pour your batter into greased or lined cupcake pan. Bake at 350 degress for 15-20 minutes.

While your cupcakes are baking, it’s time to make your Baymax cupcake toppers. Simply use black gel icing to pipe to dots and a line onto a jumbo marshmallow!

When your cupcakes are cooled, ice with white icing and top with a Baymax cupcake topper.

The boys went absolutely nuts over these cupcakes! They were the perfect way to have a Big Hero 6 Movie Night.

Baymax Big Hero 6 White Cupcakes

Ingredients

  • 2 1/4 cups cake flour
  • 1 cup milk at room temperature
  • 6 large egg whites at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon table salt
  • 1 1/2 sticks unsalted butter, softened but still cool

Instructions

  1. Pre-heat oven to 350 degrees. Grease cupcake pan or line with cupcake liners.
  2. In a medium bowl, mix the room temperature milk and egg whites along with the vanilla and almond extracts until blended.
  3. In a large missing bowl, combine cake flour, sugar, baking powder, and salt in bowl. Cut the butter into cubes and add it to the bowl then mix well with an electric mixer for 2 minutes until the butter is completely combined.
  4. Add the milk mixture and beat for 2 minutes on medium speed.
  5. Pour the batter into cupcake pan.
  6. Bake at 350 for 15-20 minutes or until a toothpick comes out clean when inserted into the center of the cupcakes.
  7. While your cupcakes are baking, use black gel icing to draw Baymax eyes onto jumbo marshmallows. Let stand.
  8. Cool the cakes to room temperature before icing. Top with your Baymax marshmallows.
