Growing up, I went to Catholic school for 12 years. And every Lenten season brought the weeks of not eating meat on Fridays. Which meant I ate a lot of tuna fish sandwiches for lunch.

Ingredients

  • 1 avocado
  • 1 3oz Blue Harbor Albacore Tuna in Water No Salt Added pouch
  • half tomato, diced
  • 1 stalk of celery, diced
  • handful parsley, chooped

Instructions

  1. In a small bowl, smash the avocado to break it up. Combine all the ingredients in and mix them together with a fork. 
  2. Serve in avocado skins or on bread.
