One of my favorite lunches is egg salad. Egg salad can a bit boring so you need to spice it up a bit from time to time. This time? I added some diced avocado! Going in, I wasn’t so sure about it , but it’s an amazing combination. Ingredients

  • 2-3 hard boiled eggs {depending on how many sandwiches you are making}
  • 1 avocado
  • yellow mustard to taste
  • 1 tbsp mayo

Instructions

  1. Peel eggs and slice into pieces.
  2. Pit, peel, and cut avocado into pieces.
  3. Add mayo and mustard.
  4. Mash up with a fork until desired consistency.
