Monday is the day people! We go back to school! I have shared my woes about our Fall schedule before but in case you missed it, it looks a little something like this. 

Monday – PREP
Tuesday – Vision Therapy
Wednesday – Baseball
Thursday – Vision Therapy 
Friday – FREE!
Saturday – Baseball
Sunday – Soccer

Coordinating Your Busy Family-3

My Erin Condren Planner is getting a workout! Only one night a week we don’t have something! And there’s no time in there for elaborate dinners. I need something that will basically cook itself. On most of those days, I have just enough time to heat something up, put it on the table, and hurry my kids to gobble it up. 

This should be fun. 

To help me with all of this, I have some easy weeknight dinners in my back pocket. Dinners that have been family-tested and, more importantly, family approved.

6 Easy Weeknight Dinners I Can’t Live Without

Cheeseburger Macaroni is always a family favorite! There are so many ways you could do this: change up your pasta, throw in veggies, add taco seasoning for a different taste. The sky is the limit!

Chicken Parmesan Pasta Bake is a new family favorite. Ethan had 4 plates so that tells you something. You can prep this dinner the night before and pop it in the oven to heat before serving.

Cinco de Mango Quesadillas are an easy twist on quesadillas. My boys love quesadillas and they are my go-to for a quick dinner, but they can get a little boring with just chicken and cheese.

Slow Cooker Chicken Taco Soup is a big winner for me! The slow cooker does all the work for me. Just throw in all the ingredients and come dinner time, it’s ready.

Another easy weeknight dinner is shredded chicken nachos. My boys just figured out how much they love nachos and have been asking for cheesy nachos almost daily.

And now for my favorite, Crunchy BBQ Ranch Chicken Salad. You can’t go wrong with a salad.

As you can see a lot of our dinners are chicken based or beef based. I have very picky eaters in my house so when I find something that works I stick to it. 

To help cut down on prep time, I like to buy or make a rotisserie chicken on the weekends and use the meat in my dinners throughout the week. This really cuts down on cooking times and helps me prep dinners well in advance.
