Last week, the boys and I were invited to a fun cooking class at Really Cooking With Robin. I wasn’t sure how this was gonna pan out. First, it was after-school. Second, it was during dinner-time. And third, we were cooking with mangos. Mangos aren’t something that we have experimented with yet so I wasn’t sure how that was gonna go over. But they agreed to go into it with an open mind and a hungry stomach.

We started our class by leaning a little bit about mangos. Like, did you know that there are six different kinds of mangos?! And that mangos pack a nutritional punch at just 100 calories per cup, making them a perfect snack any time of day.  Mangos provide 100% of your daily vitamin C, 35% of your daily vitamin A and 12% of your daily fiber.

Next, we learned how exactly one cuts a mango. Again, this was something totally new to me and I am happy to report I can slice up a mango now!  To cut a mango, simply slice off the sides of the fruit, avoiding the large seed in the center.  Once you have these two sides, you can get to the flesh and slice or dice as needed. Then, simply scoop it out of the skin.

We started off the class with some easy Mango and Banana Smoothies. So easy to whip up in the morning before heading out the door and they are Benjamin approved!

Next, it was time for the quesadillas. The boys were really excited about these because they love quesadillas!

Adding fresh mango to your quesadillas is a great way to switch things up for dinner. Top them with fresh mango salsa for more of a mango pop.
